Delicious Nutella Crepes



My Daughter requests these delicious Nutella Crepes at least once a week. They are quick to make, so it is easy to whip them up in the morning. I also seem to have enough batter to last a couple days! The wonderful flavour of warmed Nutella wrapped in a thin layered pancake can't be beat! I love to sprinkle icing sugar, and cinnamon on at the end. Dressing the plate with any type of fruit is also a nice healthy touch and very appealing on the eyes! 

Nutella Crepes Recipe

Ingredients

1 cup All Purpose Flour
1/tsp. Cinnamon
dash of Salt
1 egg
3/4 cup of Almond Milk or 1% Milk
1/4 cup water
1/2 tsp. of Cinnamon
2 tbsp. melted butter
dash of salt

Nutella
Icing Sugar
Cinnamon

Directions

In a small bowl mix the flour, salt, and Cinnamon.  Add in the egg and blend as best as you can. It will be dry but don't worry. Mix the Almond Milk and water to make 1 total cup of liquid. Add the liquid in slowly. Continuously mix so the batter will not be lumpy. Add in the melted butter. For best results, and a beautiful silky batter use a blender. Add the batter to the vitamix, and turn on low speed. Slowly add the butter. This will produce a nice smooth batter.

To Make:

Heat the Cooktop to Medium/High Heat. Using a thin crepe pan, add 1 tbsp. of butter to a paper towel. I wipe the pan with a buttered paper towel to make a thin even layer of butter on the pan. Add approximately 2-3 tbsp. of the batter and use your wrist to swirl the pan around so the crepe is evenly spaced and thin. Cook until the the crepe starts to bubble and slightly golden brown on the one side. Flip the crepe. Using a butter knife spread Nutella onto the crepe. I like to use a spatula to pin down the one side of the crepe while I spread the Nutella. It prevents the crepe from moving around.  Fold each side of the crepe and remove from heat. 

Sprinkle with icing sugar, and cinnamon. Dress the plate with any fruit you may have on hand!
