Raspberry Almond Bars



These Delicious and Easy Raspberry Almond Bars are so simple to make and very satisfying! 

I have been making this recipe since my children were young! It has always been a hit in our house! You can use any type of fruit jam for the filling if raspberry isn't your first choice! 

Ingredients:

1/2 cup butter

1 1/2 cups all purpose flour

1/2 tsp. Cinnamon

1/4 tsp. of salt

1/4 tsp. baking powder

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg yolk

3/4 cup sliced almonds

1/2 cup raspberry jam, or jam of your choice.

Directions:

Preheat oven to 350 degrees. Butter an 8 inch square baking dish. 

In a bowl, whisk together flour, cinnamon, salt and baking powder.

In a separate bowl, cream butter and sugars on high speed until light and fluffy; beat in egg yolk.

Reduce speed to low, and gradually add the flour. Stir in almonds.

In a small bowl, loosen the jam using a whisk. 

Gently press half of the dough into the bottom of the baking dish. Spread the jam over the dough. Leave a 1/4 inch around the sides as the jam spreads when cooking. Sprinkle the remaining dough over top to create a topping; press gently. 

Bake until the top is golden, approximately 25 minutes. Cool. Cut into bars and serve!
