Beautiful Potato Rosettes

 


These most delicious Potatoes are so fancy to look at, and really easy to make (think fancy mashed potatoes). These are perfect for Valentine's Day or any Romantic dinner. I love how the inside texture is silky smooth, and the outside is nice and crispy. You can make these in advance and put them in a ziploc bag with a piping tip so it's ready to go quickly. High heat and 15 minutes in the oven make these a great fancy addition to the plate!

Ingredients:

1 small 3lb.bag Yukon Potatoes, peeled and diced into 1" pieces

3 tbsp. butter, plus 1 tbsp. melted for the end

2 eggs, beaten and room temperature

3/4 cup Cheddar Cheese

1/2 tsp. Seasoned Salt

1/2 tsp. Onion powder

2 green onions, finely chopped

1/8 tsp. of grated Nutmeg (optional)

1/4 cup milk

Pepper, to taste


Directions:

Preheat oven to 500 degrees.

Place the potatoes in a medium saucepan. Rinse the potatoes once. Add Fresh water, covering the potatoes by approximately 1 inch above the potatoes. Add a good amount of salt. Cover and bring to a boil. Once boiling cook for approximately 10 minutes. Make sure the potatoes are fork-tender. Drain the potatoes and mash them with the butter. Add in the rest of the ingredients and using a hand mixer, blend everything really good.  Adjust the seasonings to your liking if needed.

Using a ziploc bag. Place a Piping tip of your choice in one of the corners of the bag. Make a slight cut in the bag so the tip can come out slightly. Add the mashed potatoes to the bag. On a large baking sheet with parchment paper, pipe round circles into mounds resembling a rose. Add a little bit of melted butter onto the potatoes.

Place in the oven for a minimum of 10 minutes. Bake until your desired browned crispiness.
