Tomato Mozzarella Melts With A Simple Mayo Mustard Spread

These Super Simple and Most Delicious Open Faced Sandwiches will sure to be a hit! The secret is definitely in the Mustard Mayo Spread! I also recommend purchasing good bread for the bottom. My daughter had this idea for these melts, and encouraged me to get the right bread. This was not an easy task! After two stops, I found a Beautiful 9 grain bread from Metro Grocery Store. The bread came whole, that I sliced on my own. It was nice to make a slightly bigger slice so that it handled the ingredients on top! I used my Toaster Oven to Toast the bread, and then broil them gently at the end until the cheese has melted nicely.

Ingredients:

For the Sandwich:

1 loaf of good quality whole wheat bread sliced approximately into 1 inch slices

2 Tomatoes, sliced, salted, peppered and a wee bit of sugar sprinkled on the tops

Shredded Mozzarella cheese

Freshly chopped basil

Simple Mayo Mustard Spread:

1/2 cup of Mayo (hellmans)

2 tbsp. Honey Dijon Mustard

1 tsp. of Italian Seasoning

1 tsp. Garlic Powder

Salt & Pepper

Mix All ingredients, and set aside.

Directions for Assembly:

Toast the bread lightly in a toaster oven. Careful not to toast the bread too much. Pull the Toast out and add a good amount of the Mayo/Mustard Spread to the bread slices.

Top with Mozzarella cheese, Tomatoes, and Basil.

Place them back into the toaster oven (or oven) and broil them until the cheese has melted nicely. If the Tomatoes appear too dry, you could always add a little bit of olive oil when they come out.

Serve Immediately.
