Smokey Chicken Tacos with Chipotle Mayo

 

These Slow Roasting and Smokey Flavoured Tacos are going to be a sure hit! It is really simple to put together also! The Secret here is Flavouring the liquid! Flavouring your stock before putting it over the chicken is really key here! Mexican Flavourings include: Stock, Shallots, Garlic, Cilantro, Chilli Powder, chipotle in adobo sauce liquid, Cinnamon, Cocoa Powder, Paprika, Tequila, Lime, and tomato paste. I simmer the liquid in the beginning of preparation so it gets its flavour before pouring it over the chicken! Pop the chicken in the oven, prepare your toppings and there you go! A delicious and easy meal that will loved by them all!

Ingredients:

For the Chicken:

1 pack of chicken thighs, boneless and skinless

1 onion

4 cloves of garlic, peeled and smashed 

1 jalapeno diced

1 red pepper diced

Corn flour to thicken if needed

Mexican Flavoured Liquid - 

*Simmer in a Small Pot*

3 1/2 cups Stock - Chicken, Beef or Vegetarian your choice

1 shallot, peeled and cut in half

1 clove garlic, minced

4 stems of cilantro, washed keep whole

1 tbsp. chilli powder

1 tbsp. of the adobo liquid from a can of chipotle in adobos

1 tsp. cinnamon

1 tbsp. cocoa powder

1 tsp. paprika

1 tsp. tequila (optional)

1/2 lime squeezed

1 tbsp. tomato paste

Salt & Pepper to Taste

For the Chipotle Mayo

1/2 cup mayonnaise

1/4 cup sour cream or plain yogurt

2 chipotle chiles from a can of chipotles in adobo

1 clove garlic, minced

2 tablespoon freshly squeezed lime juice

Preparation:

Preheat the oven to 350 degrees. 

In a heavy pot, Add olive oil to the bottom of the pot. Add chicken to the pot, and slightly brown each side. This will take approximately 7 minutes in total. We just want to create some flavouring. Remove the chicken. At this point, add in the onion, garlic, and peppers. Mix everything good. Using a Strainer over the chicken, add the liquid to the pot straining all of the ingredients that were simmering in the pot. Mix the chicken in the liquid. Cover the chicken and place in the oven for approximately 1 1/2 hours.  Remove from the oven and simmer on the stove without the lid. Sprinkle with a little bit of corn flour to thicken. Using 2 forks, shred the chicken. It's ready to serve!

Possible Toppings:

Shredded lettuce, tomatoes, red onion, goat cheese, and chipotle sauce and soft tortilla shells slightly grilled.
