Vegetarian Buddha Bowl

This most delicious Vegetarian Buddha Bowl is Easy to Assemble, Bright and Full of Nutrition! The assemby of the Buddha Bowl is key here! Break up the bowl into quarters and then assemble with what you like! Included in this buddha bowl is:

Falafel

Homemade Guacamole

Cubed Sweet Potatoes seasoned lightly and cooked in the air fryer (under 10 minutes!)

Brown Rice made in a rice maker (if you don't own a rice maker, GET ONE! The Best!)

Salad with a Bruschetta Topper

Garlic Dip Garnish

Falafel:

I bought a Falafel mix where you simply add water. I let it sit for 1 hour and then added some fresh ingredients before forming into balls. Included in the fresh ingredients were: onion, parsley, cilantro, and salt.

Shape into balls. I fried the falafel's in vegetable oil. The oil was heated to 350 degrees and dropped in for approximately 3 minutes per side.

Sweet Potatoes:

Peel and cube the sweet potatoes. Season the sweet potatoes with garlic, cinnamon, chilli powder, salt and pepper. Toss in olive oil. Place in the air fryer. Set the temp to 400 degrees and cook for approximately 8 -10 minutes.

Brown Rice:

Make the rice according to the rice maker instructions, very easy. I purchased a rice maker and absolutely LOVE IT! It was $16 to purchase and makes perfect rice all the time! You could also use the rice maker to keep dips warm for entertaining.

Salad:

I made a salad with romaine and tomatoes. The dressing was made with a little balsamic and olive oil and garlic. You could use any dressing that you fancy.

Garlic Dip: I purchased Grape Leaves Garlic dip for the falafel! So Good!
