Homemade Tomato Soup
This Homemade Tomato Soup is hearty and warming! Perfect for a Winters Day! You can whip this up in no time so its good for a quick lunch option. I served this with a Welsh rarebit which is basically a fancy open faced grilled cheese. It was very satisfying!
Ingredients:
1 shallot, finely chopped
2 garlic cloves, minced
1 tsp. Italian Seasoning
1/2 tsp Red pepper flakes
1 Bay Leaf
2-3 tbsp. Butter
1/4 cup flour
1 can Heinz Tomato Juice, 750 ml.
1/2 Heinz Tomato Can Mixed with 1/4 cup water, 1/4 cup Cream
Grated Nutmeg
Brown Sugar as needed, if you find it bitter tasting
1/2 tsp. Vegetable soup base
Chopped Fresh Basil, and Parsley
Salt & Pepper To taste
Directions:
Over Medium heat melt the butter. Add in Shallots, and cook for approximately 3 minutes then add your garlic, Italian Seasoning, and Red Pepper flakes. Cook together for another minute.
Add Flour. Whisk for approximately 1-1/2 minutes to cook out the flour taste.
Add tomato Juice, water/cream mix Grated nutmeg, and vegetable soup base. Stir until thickened. Add Bay leaf and simmer for approximately 10 minutes. Season with Salt & Pepper to taste. You may also want to add a little bit of brown sugar if you find it too bitter tasting. When you are ready to serve, add in your chopped fresh basil and parsley.
