Roasted & Caramelized Sweet Potatoes

 


This Sweet Potato Recipe is bursting with flavour! It just might become your easy   go-to side dish recipe for a busy weeknight! The sweet potato is first baked and then quickly caramelized in a skillet with honey & butter. 

How can this recipe go wrong, right? 

I have been on this Garnish everything with Herbs Kick lately...I have discovered that a blend of fresh herbs takes your dish to the next level for sure! I have enjoyed the flavours of Basil, Cilantro, Green Onion, granulated garlic, a dash of honey, and a tiny bit of dijon mustard. Like Wow, honestly. You can use this Herb idea for fish and chicken dishes as well! Really good! 

Now back to the sweet potato. You have the natural sugar flavours of the sweet potato, the honey and melted butter. This Sweet Potato is so good on its own! You could really stop here and serve them now if you were pressed for time. They are that Good. 

If you want to step it up a notch, you can garnish it with the Herb blend that I mentioned above and add goat cheese, and Sour Cream. Delicious!

Recipe For Roasted & Caramelized Sweet Potatoes 

Ingredients:

4 Sweet Potatoes, Sliced in half.

Olive Oil

Salt 

1 tbsp. Butter

1 tbsp. Honey












Herb Topper Recipe:

1 tbsp. each of Fresh Basil, Cilantro, 

2 Green Onion finely chopped

1 tsp. Granulated Garlic

1 tsp. Dijon Mustard

1 tsp. honey

1 tbsp. Olive Oil

Salt & Pepper











Directions:

Preheat oven to 375°. Line a Baking sheet with Parchment paper. 

Cut Sweet Potatoes in half. Rub the Sweet Potatoes with olive oil and salt. Place the halved sweet potatoes cut side down on the baking sheet. Bake for 45 minutes. The sweet potatoes should be soft and cooked through. 

Add butter and honey to a large skillet over medium heat. Use a spatula to incorporate the melted butter honey together. Add the sweet potatoes skin side up and cook for up to 5 minutes. This is how it will get that nice caramelization. Serve and garnish as mentioned above.
