Homemade Healthy Granola

I have been making this delicious Granola since 2006. A recipe that I picked up from a Tranquil resort and spa just north of Toronto called Ste. Annes Spa. A full service all inclusive spa in Haldimand Hills. Perched up atop of a hill overlooking beautiful views of Lake Ontario provides the perfect setting for some rest & relaxation. The spa services are amazing! Included in your stay is 3 healthy and hearty balanced meals, and snacks throughout the day. This Granola is placed in the waiting room at all times for guests to enjoy. I have adopted this recipe and altered it to our liking which we enjoy every morning with a bowl of plain yogurt with honey and cinnamon added. Hope You Enjoy!

Ingredients:
1 cup Chopped Raw Slivered Almonds
1 cup Chopped Pecans
1 cup Sunflower Seeds (hulled, unsalted)
1 cup Pumpkin Seeds (hulled)
1 cup unsweetened coconut
1/2 cup sesame seeds
1/4 cup unsalted butter
1/4 cup honey
1 tsp. vanilla extract
1/8 tsp. ground clove
1/4 tsp.ground nutmeg
1/2 tsp. ground cinnamon
2 cups dried cranberries, or dried cherries, golden raisins, or combine a little of each to make 2 cups

Method:
Preheat Oven to 325 degrees
-Combine all nuts & seeds, coconut and spices. Toss well.
-Melt honey and butter over low heat. Add Vanilla.
-Pour honey mixture over nut mixture and mix well.
-Spread evenly onto a large baking sheet with sides and cover with parchment paper
-Bake 20 minutes, turning mixture after 15 minutes
-Add dried Cranberries after the 20 minutes and continue to bake for 5 more minutes
-Let cool and and place in an airtight container.

To Serve:
Enjoy on its own, or add it to your favourite yogurt. I use plain yogurt and add cinnamon and honey.
