Pulled Tandoori Chicken

 

I Love making this easy Pulled Chicken Recipe. You can change it up to any theme or taste that you desire. I marinated the chicken in Tandoori Seasoning before baking to add an Indian Flare for dinner tonight. You can skip the marinating steps if you do not have time and simply season the chicken with salt and and go from there!

This Pulled Chicken is delicious served on top of a salad, over nachos, in a soft taco,  or on a bun. It is delicious served any way that you wish! My family loves my Jojo's Homemade Buttermilk Ranch with this chicken! With a few simple steps, you will have an easy dinner ready in no time! 

Ingredients:

1 whole chicken, cut into pieces or 1 pack of chicken breasts with bone in and skin on

Salt & Pepper

Tandoori Marinade:

Juice of 1 lemon  and 1 tsp salt, mix

2 tbsp. Tandoori Seasoning (Purchased from the Bulk Barn)

1 tbsp. garlic powder

1/2 cup plain yogurt

For the Chicken:

2 tbsp. Olive Oil

1 onion, sliced thin or on a mandolin 

6 garlic cloves

1 cup of bbq sauce (you pick)

1/2 cup chicken stock 

Directions:

Marinate the chicken in the Lemon and salt mix for half hour. Remove the chicken and discard the lemon salt mix. In a large bowl, mix the tandoori seasoning, garlic powder and plain yogurt. Marinate for half hour. 

Preheat oven to 375 degrees

In a heavy bottom pot that is oven safe, over medium/high heat add Olive Oil and brown chicken on both sides, approximately 7-8 minutes. Place chicken on a plate. Discard the oil from the pot. Add in the onions, and garlic stirring constantly to avoid burning only 2-3 minutes. Add the chicken stock scraping the brown bits off the bottom of the pot (this is flavour!). Add the chicken back into the pot. Add the bbq sauce of your choice. Stir everything really good. Place the lid on the pot and place into the oven for approximately 1 hour. The chicken should easily fall apart to determine its doneness.

Remove the chicken from the pot. Using two forks shred the chicken and discard any bones, skin etc. Add the shredded chicken back into the pot. Mix everything together and serve.
