Easy Instant Pot Thai Peanut Curry Noodle
My Son and I Love this Thai restaurant in our city. They have the Best Thai Peanut Curry Noodle! It's that Good! I decided to try and make it at home. This was really good, and I thought it was pretty close to the way they make it in the restaurant!
I used my instant pot to make this dish which really made the process speedy. I steamed some vegetables, boiled the noodles and Voila! Dinner made quick!
Ingredients:
1/4 cup Maple Syrup
2 tbsp. White Miso
1 tsp. Curry Powder
1 tsp. Red Pepper Flakes
2 tbsp. Tamari
2 tbsp. Lime Juice
1/2 cup Peanut Butter
2 cups hot chicken or Vegetable Stock
2 tbsp. Chili Garlic Sauce
1/2 onion, diced
3 garlic cloves minced
2 inch Ginger, minced
1 thai chili
2 Cups of Veggies Steamed (your choice) I used broccoli, carrots, and peas
1/4 cup cilantro
Rice Noodles, cooked to package instructions
Directions:
In a Large Measuring cup add 2 tsp. powdered chicken stock and fill to 2 cups of hot boiling water. Add in maple syrup, miso, curry powder, tamari, lime juice, and peanut butter. Stir really good, allowing everything to melt in together.
Turn the Instant pot to saute setting. Add the onion, thai chili, garlic, and ginger. Cook for approximately 3-4 minutes. Pour the liquid into the instant pot. Stir.
Shut off the Saute feature and then place the lid on the instant pot. Set to Manual Setting, for 5 minutes. Once the cycle is complete allow to sit for another 5 minutes, and then quick release.
Meanwhile:
Boil the noodles, and steam the veggies that you want.
Mix All the ingredients together and plate! Add some Fresh Cilantro and Enjoy!
