Delicious Layered Greek Appetizer
This super easy Greek Layered Appetizer is very appealing to the eye, and really delicious! I decided to have a Greek themed dinner night and instead of a greek salad I served this dish! For the menu I made Greek Chicken Shish Kabobs, Roasted Potatoes, homemade Tzatziki sauce, and Greek style Lemon Green Beans! It was so Good!
To the top of the appetizer, I made a simple greek dressing that was ladled over the top of the salad very sparingly. I didn't want to overpower the appetizer with dressing. Use the extra dressing to brush the roasted potatoes when they come out of the oven!
This would be a fantastic appetizer to bring to a party or a great addition to a greek themed dinner!
Layered Greek Appetizer
1 container of your favourite hummus
1 cup chopped fresh tomatoes, salted and drained in a colander. Gently dry with a paper towel
1/4 cup sliced black olives or kalamata olives whichever you prefer
1/4 cup sliced radish
1/4 cup chopped pepper, I used orange for a different colour
1/2 Crumbled feta cheese
1 cup Arugula
Salt & Pepper
Directions:
Layer in the order of the list of ingredients noted above. Serve chilled with fresh Pita bread!
Greek Dressing
1/3 cup olive oil
1/2 fresh lemon, juiced
1 tsp. red wine vinegar
1 tsp. granulated garlic
1 tsp. Dijon Mustard
1-2 tsp. dried oregano
1 tsp. sugar
1 tsp. salt
pepper
Directions:
Blend all ingredients and adjust to your liking if necessary
