Greek Chicken Shish Kabob Marinade
These Greek Chicken Shish Kabobs are easy to assemble and very tasty! Marinate the chicken for at least 1 hour and up to overnight for the maximum flavour.
The plain yogurt helps to keep the chicken tender and moist.I served the kabobs with my Homemade Ranch Dressing and baked sweet potatoes.
Greek Chicken Kabobs
1 large pack of boneless skinless chicken, cut into 1 inch chunks
2-3 Red peppers, sliced into large pieces
1 Red onion, sliced into large pieces
1 Zucchini, sliced into 1/4 inch slices
Greek Chicken Marinade
1/2 cup plain greek yogurt
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
zest of 1 lemon
1 tbsp. balsamic vinegar
1/2 tsp. sugar
2 tbsp. dried oregano
1 tbsp. fresh thyme or 1 tsp. dried
1 tsp. Salt
1 tsp. Pepper
1/4 tsp. red pepper flakes
Instructions:
Combine all of the ingredients for the marinade and add chicken. Mix well. Let marinate at least 1 hour to overnight. The longer the better.
Assemble The skewers as desired. I used zucchini, then 2 pieces of chicken, followed by onion, pepper and repeat. I used approximately 6 chunks of chicken per skewer.
Grill the shish kabobs on a hot bbq, turning frequently to prevent burning. Grill chicken until the juices run clear and cooked all the way through.
