Roasted Carrot Instant Pot Hummus


Roasted Carrots and hummus blended together is incredibly delicious! Who Knew?
First off, I love the recipe below for the instant pot hummus. I make a large batch of plain hummus once a week for my daughter! It is so easy to make with the instant pot, and is extremely healthy! 
My friend makes a delicious roasted carrot hummus and serves it up with freshly sliced jicama sticks, crackers and sliced carrots! It is really good! 
I incorporated my instant pot hummus recipe with the roasted carrots and voila! Roasted Carrot Hummus! You may want to bookmark this instant pot hummus recipe for the future! It will definitely become a family favourite!

Roasted Carrot Instant Pot Hummus
Instant Pot Hummus 1 cup dried chickpeas, washed and left in water for at least 10 minutes. 1 tsp. Baking Soda 1 tsp. Salt 6 cups water 1/2 cup tahini 5 tbsp. Fresh lemon juice 1 tbsp. Olive oil 2-3 garlic cloves, finely minced 1/4 tsp. Paprika 1 tsp. Salt 8 tbsp. Ice cold water Instant pot directions:
Drain chickpeas. Add to the Instant pot, the chickpeas, baking soda, salt and water. Seal the lid, select high pressure and set the timer for 40 minutes. Once cycle is complete, natural release for another 15 minutes. Fully release any remaining steam. In a food processor, add the chickpeas and blend until it reaches a thick paste like puree. You may need to do this in sections to process the chickpeas better. Add the tahini, lemon juice, garlic, olive oil, salt, and paprika. Blend good. With the food processor running add 1tbsp. Cold water at a time creating a silky looking hummus. Keep adding slowly until the hummus looks silky and creamy. 
Adjust seasonings as desired.

Roasted Carrots Recipe 6 carrots, peeled and sliced into 1/4" pieces 1 small shallot, finely chopped 1 1/2 tbsp. Fresh Rosemary, finely chopped
1 1/2 tbsp. Fresh Thyme, finely chopped 2 tbsp. Honey 1/2 lemon squeezed 1 tsp. Salt 1 tsp. Pepper 3 tbsp. Olive Oil Preheat Oven to 375° Place all ingredients into a roasting pan with a tight fitting lid. Mix everything together good, making sure all the carrots are seasoned nicely. Roast for 25 minutes or until the carrots can be pierced easily with a fork. Remove from the oven. In a food processor, blend the carrots until pureed.
To finish:. Add the pureed carrot and hummus together in the food processor. Taste for correct seasoning if needed. You may need to add more salt. Serve with freshly chopped Jicama sticks, crackers, or more carrots!
