The Best Banana Cake Ever with Banana Whipped Topping



This Banana cake recipe is really good! Who wouldn't love warm banana cake with a banana whipped topping? I served the cake with some fresh fruit and a coffee at breakfast. A rainy morning, and warm banana cake. Comfort food at its finest!

I always love different techniques for baking or cooking. I think the real secret in this recipe is the blending of the wet ingredients before mixing. This recipe only calls for 1 banana in the cake and 1 banana in the frosting. I couldn't believe how much the banana flavour carried through the entire cake. Really good!

Banana Cake

Ingredients: 1 cup flour 1 tsp. Baking powder 1/4 tsp. Salt

1/2 cup butter, softened

1 egg

1 ripe banana 1/2- 3/4 cup sugar (depending on desired sweetness) 1/2 tsp. Vanilla Directions Preheat oven to 375°

Grease 8 or 9 inch baking dish and dust with flour

Sift flour, baking powder, baking soda, and salt in a bowl. Set aside

In a blender, place egg, banana, butter, sugar, and vanilla. Blend on high speed for 1 minute or until you have a smooth consistency Pour liquid mixture into the dry mixture. Mix just until combined thoroughly. 

Pour into the baking dish and bake for approximately 25 minutes Cool on a wire rack.

Banana Whipped Topping (for banana cake)

Ingredients:

1 ripe banana 2 tbsp. sugar 1/4 tsp. Pumpkin spice or cinnamon 3/4 whipping cream Directions: Place banana, sugar and pumpkin spice in a blender and blend until smooth Whip cream on high speed until peaks form. Add banana mixture to the whip cream. Blend in until firm.
