French Fries and Blue Cheese Dip



Who doesn't Love Homemade French Fries? Add a Blue Cheese Dip and now you raised it to a new level! Your family will Love them! There is a trick though. Following a few secret and simple steps will make your fries taste fantastic!

5 Secrets to making your Fries a Hit!

1/ Cut the Potatoes into a rectangular shape by making a straight slice on each side. Peel off the rest of the skin, or leave it whichever you prefer. 

2/ French Fries are better sliced thinner than thicker. They Fry much better and quicker. 
1/8 of an inch thick is good!

3/ Rinse the Cut Potatoes in cold water. Dry them really good.

4// You must fry the potatoes twice, and in small batches (like a good handful each batch)

5/ If you have a thermometer, the first fry should be at 300 degrees F, and the second fry should be at 400 degrees F.


Ingredients:

6 Idaho Potatoes, sliced into a rectangle shape and then sliced into 1/8 inch potato pieces.

Vegetable Oil, or Peanut Oil whichever you prefer. Enough to fill 3 inches of a deep pot.

Salt

Lots of paper towels

Directions:

Prepare the potatoes. Wash them in cold water. Dry the potatoes really good. Heat the Olive Oil to 300 degrees F.  Using a Slotted spoon, lower a heaping handful of potatoes into the oil. Fry until the bubbles dissipate. That is a sign that the potatoes are cooked inside.

Remove the potatoes and place onto a doubled paper towel. Continue this process until the first batch of all the potatoes are completed. Keep the batches separate if possible. 

Raise the heat and get the oil to 400 degrees F. Checking with your thermometer.

Go back to the first batch that you fried and place those fries in for a second time. Keep frying them until they are a beautiful golden brown. I would say approximately 7-8 minutes depending on how golden you like them.

In a bowl, place fresh paper towels. Put the finished fries in the bowl and toss. This helps to take out any extra unnecessary oil. Sprinkle with salt and set aside. 

Continue this process until the French fries are completed.

Blue Cheese Dip

Ingredients:
1 cup mayonnaise
1/2 cup buttermilk (easy to make your own: 3/4 cup of milk mixed with 1/4 cup fresh lemon juice)
1/2 cup crumble blue cheese
1 small shallot, minced
1 tbsp. freshly squeezed lemon juice
1/2 tsp. Worcestershire sauce
1/2 tsp. salt
1/4 tsp. celery seed
1 tbsp. curly parsley, chopped fine
Fresh ground pepper

Directions:
In a food processor combine all the ingredients and blend really good. Refrigerate until ready to serve.
