Healthy Coconut Lime & Cherry Granola


I made this Granola with Cinco De Mayo on the mind! I was thinking, a taste of  Lime, Agave, Coconut and a touch of salt! Healthy & Fresh tasting guaranteed to put a Zing in your step! Very easy to make! Enjoy a bowl of yogurt and granola each morning!

Lime, Coconut & Dried Cherry Granola 1 cup slivered almonds 1 cup pumpkin seeds 1 cup pecan pieces 1/2 cup hemp seed 1/2 cup ground flaxseed 1 cup unsweetened coconut 1/2 cup Chia Seed
1-2 tsp. Cinnamon (or as desired) Zest of 2 Limes Pinch of salt 1 cup Dried Cherries or dried cranberries 1/3 cup Coconut Oil 1/3 cup Agave Nectar 2 tbsp. Fresh lime juice 1 tsp. Pure Vanilla extract Preheat oven to 325 degrees In a Large Bowl, mix the nuts, seeds, coconut, lime zest, cinnamon, and a pinch of salt. Leave the dried Cherries for later.
In a small saucepan, melt coconut oil and agave over low heat. Once melted remove from heat immediately, add vanilla and fresh lime juice. 
Pour over the granola mix and blend. Place parchment paper on a large baking sheet. Pour mixture onto the baking sheet and spread evenly. Bake for 15 minutes. Remove from the oven and give it a mix. Add the dried cherries. Place back into the oven for another 5-7 minutes. Granola should be a nice golden colour. Let cool. Store in an airtight container.
