Bruschetta Topped Avocado Toast


I Love Avocado Toast! It's quick and easy and extremely Healthy! Great for breakfast or a just quick appetizer! You can get very creative with very few ingredients. It is a good idea to use a nice Artisan Bread that you love. This time I made an easy Bruschetta Topper with some grape tomatoes that I had in the fridge. I topped it off with honey goat cheese, to add as the little sweet part of the recipe. Mmm, Delicious and very satisfying!
Have you ever tried Maldon Salt? If not, I would highly recommend having a box on hand. It is considered a finishing salt, and in my opinion, a secret in the cooking world. It is a high quality, flaky salt. It can be added at the end of any dish! I use if for everything from finishing salads, or even cookies!

Ingredients:
3-4 pieces of Good Artisan Bread, I like Olive Bread from a local bakery
2 avocados
Sprinkle of Garlic Powder
Cracked Pepper & Maldon Salt

Bruschetta Topper
Nice big Handful of Grape Tomatoes, washed and chopped good
1 Green Onion, chopped
1 tsp. Parsley or Basil or any fresh herb that you love, chopped
Salt, Pepper, and a tiny sprinkle of sugar
1/2 tsp. Balsamic Vinegar
2 tsp. Olive Oil

Finishing:
Honeyed Goat Cheese (optional)
Hot flavoured Oil, if you like heat (optional)

Directions:
Mix all of the Bruschetta Ingredients together and taste the seasonings to your liking. Set aside.
Toast Bread. Using half an avocado for each slice of toast bread, take a fork and mash the avocado into the toast. Add a pinch of garlic powder, maldon salt (or sea salt), and cracked pepper.
Top with the Bruschetta Topping.
Finish with your favourite soft cheese. I love using Honeyed goat cheese.

Avocado, Tomatoes, Arugula and lemon
