Oven Roasted Cherry Tomato Fettuccine


I made this delicious Oven Roasted Cherry Tomato Fettuccine yesterday. It was a cold damp day outside, so dinner had to be easy and was feeling it needed to be done in the oven. I had 2 containers of beautiful fresh cherry tomatoes and thought that will be dinner. It was so easy. I threw the tomatoes, shallots, garlic, fresh thyme and basil into a roasting pan. Tossed it with Olive Oil, salt and pepper and threw it into the oven for an hour. What a delicious warming flavour, perfect on a cold day. I pureed half the sauce in a food processor and kept the other half kind of chunky. All there was left to do was make the pasta! Easy healthy and hearty!

Ingredients:

2 containers of Cherry Tomatoes, washed and dried
1 shallot, finely chopped
4 garlic cloves, minced (Save 1 clove for the end)
1 tbsp. fresh thyme
1 tbsp. fresh basil
1 tsp. Red chili peppers (optional if you like heat)
3 tbsp. Olive Oil (Save 1 tbsp. for the end)
Salt, Pepper, garlic powder to taste
1/3 cup of parmesan cheese
1/3 cup fresh ricotta cheese
Fettuccine Noodles

Directions:
Preheat oven to 350 degrees.
In a roasting pan add the first 6 ingredients. Leaving out the cheeses until the end.  Mix the ingredients well making sure to coat all of the tomatoes really good. Roast in the oven for 45 minutes to 1 hour. I always know when its done when you can smell the delicious aroma of tomatoes in the house! Remove from the oven and place half of the sauce into a food processor. Process until smooth. Mix the sauces back together.  In a saucepan place 1 tbsp. olive oil and add 1-2 more cloves of minced garlic. Cook for l minute, add the sauce into the pan. Simmer while preparing the fettuccine. Before serving, add the parmesan cheese and the ricotta into the sauce. Add the pasta and reserve a little of the pasta water to loosen the sauce if needed. When you are ready to serve, add 1 tbsp. of Ricotta cheese on top and dress it with some fresh basil. This will make it look fancy! Enjoy!
