Farro Salad with Roasted Butternut Squash Salad

This Delicious Salad is absolutely delicious and very nutritious! Farro is an ancient grain that is packed with protein and fibre. It is rich in nutrients, minerals and antioxidants. It has a nutty flavour when cooked. Cooking the Farro in the instant pot makes it extremely quick and easy to make this salad! This salad is easy to assemble, great for lunches, or makes a fancy side salad! You will not be sorry!

To Prepare the Butternut Squash
Preheat oven to 500°
Peel butternut squash, cut into 1 inch chunks. Season with 1 tbsp. olive oil, 1/2 tsp. Each of salt, pepper, and garlic powder. Spread squash onto a rimmed baking sheet and Roast for 20-22 minutes turning once. Butternut squash should be cooked through and browned slightly on the outside.

Farro Instructions for the Instant Pot:
Rinse 1 cup farro, drain. Add to the Instant Pot with 3 cups broth or water
Seal lid and cook on MANUAL high pressure for 12 minutes. Allow pressure to release naturally then remove lid. Drain any remaining liquid. Cool.

Mix all the ingredients together, add the salad dressing and adjust the seasonings as necessary.
